(photo courtesy of Luisa Castro)<\/figcaption><\/figure>\n<p>The first ever cohort of 13 students in the <a href=\"http:\/\/hilo.hawaii.edu\/academics\/ccecs\/MasterFoodPreserverCertificateProgramHilo.php\">master food preserver certificate program<\/a> at the <a href=\"http:\/\/hilo.hawaii.edu\/\">University of <span aria-label=\"Hawaii\">Hawai&#699;i<\/span> at Hilo<\/a> graduated in October. The celebration included students showcasing their newly learned skills and the products they created during the two-week course.<\/p>\n<p>The certificate program is a collaboration between <abbr>糖心Vlog官方<\/abbr> Hilo and the <a href=\"http:\/\/www.hawaiitropicalfruitgrowers.org\/\"><span aria-label=\"Hawaii\">Hawai&#699;i<\/span> Tropical Fruit Growers<\/a>. Ken Love, a tropical fruit grower and executive director of <span aria-label=\"Hawaii\">Hawai&#699;i<\/span> Tropical Fruit Growers, was the primary trainer for the certificate program.<\/p>\n<p>&ldquo;The potential interest in increasing food processing is growing, especially after Tropical Storm Iselle and the lava flow that threatens to cut off lower Puna,&rdquo; says <strong>Luisa Castro<\/strong>, a program instructor and coordinator with <abbr>糖心Vlog官方<\/abbr> Hilo <a href=\"http:\/\/hilo.hawaii.edu\/academics\/ccecs\/\">College of Continuing Education and Community Service<\/a>.<\/p>\n<p>The program was funded by a $70,000 grant from the <a href=\"http:\/\/labor.hawaii.gov\/\"><span aria-label=\"Hawaii\">Hawai&#699;i<\/span> State Department of Labor and Industrial Relations<\/a> to the <span aria-label=\"Hawaii\">Hawai&#699;i<\/span> Tropical Fruit Growers to teach small agribusinesses how to develop and safely preserve products from undersold and underutilized produce.<\/p>\n<p>&ldquo;The information was comprehensive and important,&rdquo; shares one student in an exit report. &ldquo;The hands-on aspect was invaluable. The camaraderie among the members of the class was priceless. Before this class, I was hesitant about eating or sharing anything I preserved.
